Roasted Turkey Panini

Serving Size: ½ sandwich

Ingredients:

2 tablespoons Dijon mustard
2 slices bread of choice
2 slices Swiss cheese
1/3 cup shredded roast turkey
3 tablespoons cranberry sauce
¼ cup stuffing
1 tablespoon gravy
Cooking spray

Directions:

  1. Spread the mustard on both slices of bread, then lay a slice of cheese on each piece.
  2. On one slice, arrange the turkey and the cranberry sauce.
  3. On the other slice, lay on the stuffing and spoon the gravy over the top.
  4. Carefully bring together the two halves of the sandwich.
  5. Turn on panini maker or heat skillet over medium-low heat. Spray pan with cooking spray. Place sandwich on grill and cook until the bread is crispy and the cheese is melted. If using a skillet, you can use a second pan on top of the sandwich to press it (and don’t forget to flip halfway through to cook both sides).
  6. Slice the sandwich and enjoy it hot.
