Heart Healthy Slow Cooker Turkey Lasagna

Servings: 8 (Size: 1 cup)

Ingredients:

1 medium white onion, chopped
2 garlic cloves, minced
1¼ lbs. lean 90/10 ground turkey
1 teaspoon dried oregano
1 teaspoon dried basil
¼ teaspoon black pepper
1 (15 ounce) container low-fat cottage cheese
1 cup reduced-fat Italian cheese blend, shredded
12 whole wheat lasagna noodles, broken in half (12 ounces = 24 halves)
1½ cups frozen or fresh chopped broccoli (thawed and squeezed dry if frozen)
26 ounce jar crushed tomatoes, no added salt
16 ounce can of tomato sauce, no added salt

Directions:

  1. Place ground turkey in a large skillet and add oregano, basil and black pepper. Cook turkey over medium-high heat until no longer pink; drain fat and set aside in bowl.
  2. Add onions and garlic to skillet over medium-high heat for 4 minutes or until softened; place in bowl with turkey. Add broccoli, crushed tomatoes and tomato sauce to bowl and mix all contents together; set aside.
  3. In a separate small bowl, combine cottage cheese and ½ cup of shredded cheese.
  4. Place lasagna noodle halves* at the bottom of a large slow cooker. Spread half* of the meat sauce over top of the noodles. Pour ¼ cup of water over meat sauce and noodles. Top the meat sauce with half* of the cheese mixture on top.
  5. Continue layering with the remaining noodle pieces halves, meat sauce and cheese mixture. Upon completion, add one more ¼ cup of water.
  6. Cover with lid and cook on “high” for 4 hours, or on “low” for 5 hours.
  7. Uncover and sprinkle remaining ½ cup shredded cheese over the top. Let cook for another 15 minutes before serving.

*Note: This recipe can be made into 2-4 layers, depending on the size of your slow cooker. If half of the noodles fit on the bottom, then there will be 2 layers. If ¼ of the noodles fit on the bottom, then there will be 4 layers, etc. The same would apply to the other layered ingredients.
