Garlic Mashed Cauliflower

Servings: 6 (Size: ½ cup)


1 large head of cauliflower, cut into florets
2 garlic cloves, sliced
3 tablespoons olive oil (more for garnish, if desired)
1 teaspoon black pepper
1 tablespoon chopped fresh sage (more for garnish, if desired)
1 tablespoon chopped green onions (more for garnish, if desired)


  1. Bring water to boil in a medium-sized pot. Add cauliflower, cover and cook for 12 minutes (or until tender). Drain and set aside.
  2. Add olive oil and garlic to a small skillet, and heat over low heat. Cook garlic until it begins to brown around the edges, stirring occasionally.
  3. Once cauliflower and garlic are fully cooked, transfer both to a food processor and add pepper. Blend until your desired texture is reached.
  4. Transfer product to a bowl, and stir in sage and green onions. Drizzle with olive oil, sprinkle on desired garnishes and serve immediately.
