Creamy Vegetarian White Chili

1 tablespoon olive oil
1 onion, diced
1 green chili, deseeded and chopped
3 cloves garlic
1 ½ teaspoons cumin
1 teaspoon dried oregano
2 tablespoons flour
2 cups vegetable broth
2, 15.5 oz cans cannellini beans, drained and rinsed
½ frozen corn
Juice of 1 small lime
½ cup plain Greek yogurt
Salt and pepper to taste
Optional garnish: cilantro, avocado, plain Greek yogurt, jalapeno


  1. In a large pot, heat the olive oil and onion over medium heat for 4-5 minutes until translucent.
  2. Add the green chili and garlic and continue to cook for another minute until fragrant. Stir in the cumin and oregano and cook for 30 more seconds.
  3. Stir in the flour until absorbed, then add half of the vegetable broth. Stir continuously until you have a creamy paste without any lumps, then add the rest of the broth.
  4. Add the beans and corn and simmer for 10-15 minutes. Stir in the lime juice and plain Greek yogurt and salt and pepper to taste. Heat 1-2 minutes.
  5. Serve hot with garnish if desired.
