Butternut Squash and Chicken Sausage Hash

Ingredients:

2 tablespoons olive oil
2 cups cubed fresh butternut squash or pumpkin
¼ teaspoon salt
¼ teaspoon pepper
½ cup chopped onion
1 (12-ounce) package fully cooked apple chicken sausage links, cut into ½-inch slices
1 cup sliced fresh mushrooms
½ cup chopped sweet red pepper
½ cup chopped green pepper
1 teaspoon garlic powder
¼ cup minced fresh parsley

Directions:

  1. In a large skillet, heat oil over medium heat.
  2. Add butternut squash; sprinkle with salt and pepper. Cook and stir until crisp-tender — 8-10 minutes.
  3. Add onion; cook 3 minutes longer.
  4. Add sausage, mushrooms, red and green peppers and garlic powder.
  5. Cook and stir until butternut squash is tender — 10-12 minutes. Top with parsley before serving.
