Sweet Potato Tacos

2 cups sweet potatoes, peeled and cubed (approx. 2 medium sweet potatoes)
1 tablespoon olive oil
2 teaspoons chili powder
2 teaspoons paprika
1 ½ teaspoon cumin
1 teaspoon garlic powder
½ teaspoon dried oregano
1 teaspoon salt
1 (15 oz) can black beans, drained and rinsed
6-8 (6 inch) corn tortillas, warmed
2 oz feta cheese

Slaw Ingredients:

2 cups red cabbage, finely shredded
2 tablespoons lime juice
½ teaspoon salt
⅓ cup roughly chopped cilantro


  1. Preheat oven to 375° F.
  2. In a small bowl, mix together chili powder, paprika, cumin, garlic powder, dried oregano and salt.
  3. Spread the cubed sweet potatoes out on a rimmed baking sheet. Drizzle with olive oil and seasoning. Toss until combined. Cook potatoes on center rack until tender, about 25 minutes.
  4. While the potatoes are still warm, toss them with the black beans.
  5. Meanwhile, in a medium sized bowl, mix all ingredients for the slaw.
  6. To serve, place a scoop of the sweet potato mixture into a warmed tortilla shell. Top with quick slaw and crumbled feta cheese.
